Hola!!!!My name is Lynette Tucker, I am a wife and mom to 4 kiddos.I am a personal trainer- specializing in Performance Enhancement Training and Weight loss. I have been a personal trainer on & off since 2011. During this time, I simply just ran group classes and was starting to become bored and felt like I was not reaching my full potential in my career. I wanted to do more for my clients and knew that I need to learn more in order to bring the best value to them.Getting certified through the FIT CHICKS Academy has been one of the best decisions I have made and has been the turning point for my career. I wanted to run my own fitness company and I wanted to be able to be a one stop shop for my clients. Fit Chicks Academy is helping me achieve this.After completing my certification, I decided to break out on my own (so nervous) and launched my own fitness company called Inner Warrior Fitness which provides In-Person & On-Line Personal training and we are now in the process of starting to run boot-camps. I am so excited and can’t wait to make a greater impact on our community!Completing my FNE Certification has taught me so much. It made me learn and apply the lessons taught and boosted my confidence in a way that I had been longing for. Gluten Free BBQ Crock Pot Chicken Nachos!
Ever since I was a little kid, nachos have always been one of my favorite foods! Growing up in a Hispanic household we use to load the nachos up with tons of ingredients that at the time tasted so good (white rice, Velveeta cheese, canned pinto beans, not too many vegetable just lettuce and cheese) but as I got older realized that it wasn’t as healthy as it could be! Fast forward, Nachos are still a hit in my house especially on the weekends! Most of the time we are running around with the kiddos for their sports or doing work in our yard and this is such an easy meal that you can start in the morning and by the time you get home it’s pretty much all done! You will just need to put the nachos together! That’s the fun part! This also makes a great complete in 3 meal containing healthy fats, carbs, and protein. We love finger foods in our home and to be able to just sit around the table while munching with our family and friends is PRICELESS! It feels good to keep the tradition of nachos with my family and it is even better that I am able to serve my family a healthy and fun meal!

I am sharing my spin on a healthier version of Chicken Nachos – Hope you enjoy it as much as my family and I do!
PREP TIME: 10 minutes
COOK TIME: 3 hours 15 minutes
TOTAL TIME: 3 hours 25 minutes
TOTAL SERVINGS: 5 servings
TOTAL CALORIES PER SERVING: 400
MACRONUTRIENT BREAKDOWN PER SERVING (INCL FIBRE GRAMS!):
Fat: 15.1 g
Carbs: 22.3 g (4.2g fiber,2.7g sugar)
- 2lbs Shredded Chicken Breast
- 1 white onion
- Himalayan salt to taste
- 1 tablespoon garlic powder
- 1 16 oz. bottle of Herdez Roasted Salsa Verde Medium
- 1 16 oz. bottle Pops G. Hughes Sugar Free Sweet & Spicy BBQ Sauce
- 2 bags Siete Grain Free Tortilla Chips
- Ole Cojito cheese
- Green onions
- Diced tomatoes
- Cojito cheese
- Diced avocado
DIRECTIONS: To make crockpot chicken nachos, add 2 lbs. of boneless, skinless chicken breasts with ½ white onion diced, ½ bottle of Herdez Roasted Salsa Verde Medium and ½ bottle Pops G. Hughes Sugar Free Sweet & Spicy BBQ Sauce in a crockpot.
Allow the chicken to cook for at least 3 hours on high or 6 hours on low. Once chicken is cooked remove the chicken from the crockpot and shred, then place back in the crock pot and mix all of the ingredients together. * Tip- To shred the chicken I use a hand mixer! Super easy & quick!.*
Preheat oven to 400 degrees F (200 degrees C).While oven is heating up arrange tortilla chips on a baking sheet, then cover with the slow cooked nacho chicken and top with Cojito cheese and drizzle with more BBQ sauce
Place in oven for 15 minutes at 400 degrees. Bake until cheese is melty and nachos warmed through.
Top with avocado, green onions, cilantro and diced tomatoes before serving. Feel Free to sprinkle more Cojito Cheese on top if you desire!!
TIPS TO ALTER IN LIEU OF A DIETARY RESTRICTION
To alter the recipe without the chicken you can always add quinoa and black beans instead of chicken and still have a meal with plenty of protein and fiber! I still layer everything the same way that I do the chicken. Tortilla chips, quinoa, black beans, cheese then put in oven to melt cheese and warm. Then add all the toppings you love!
TIPS TO SUB AN INGREDIENT TO ALTER THE RECIPE
If you would rather not have the grain free tortilla chips another healthy alternative would be Garden of Eatin’ Blue Corn Tortilla Chips plus they give have a wonderful color and makes a great looking dish!
