Hey Chicks, At FIT CHICKS Academy we love seeing the creativity and hard work of our Fitness & Nutrition Expert Program (FNE) students and grads. Today we are pumped to share this recipe for you from recently Certified Fitness & Nutrition Expert  Rebecca Muldoon! Rebecca created this recipe for one of the assignments in the Nutrition Module of the FNE program, and excited to introduce Rebecca and her creation!

 

Hi, I’m Rebecca I’m currently just finishing my FNE certification. I’m a personal trainer at a Womens gym. I lost 25lbs through changing my eating habits and exercising . I love motivating and challenging other women to be the best them 🙂
I chose FIT CHICKS Academy for my certification because I love how FIT CHICKS empowers women to be their best as that is what i’m looking to do in my own practice. I wanted to get certified to  help encourage and motivate other women to be the best them . To accomplish something for me.
In the Fitness & Nutrition Expert Program, the instructors are motivating, inspiring and made me feel supported! I loved the encouragement , community of women and of course the amazing instructors!
To anyone considering the program I would say just go for it. You’ve got this. You learn so much about yourself and the women around you. It was an awesome experience. Don’t let fear hold you back from your dreams! You can do anything you put your mind to. One goal, one assignment , one lesson at a time. I believe in YOU!

Apple Pecan Protein Coconut Crisp

A protein filled, crispy, nutty apple crisp. Vegan, Paleo , Gluten and Dairy
free dessert. Apple Crisp just like mom made …..well almost! Complete in 3 approved but so
much better for you. A Sunday afternoon dessert or have it for breakfast……totally kid approved!

TOTAL CALORIES PER SERVING: 117 calories per serving
MACRONUTRIENT BREAKDOWN PER SERVING
10% Carbs, 9% Fat and 6% protein
Fibre grams 2.9 grams

INGREDIENTS:
3 medium apples ( granny smith apples ) peeled and sliced thin
2 Tbsp Coconut Flour
1 Tbsp Maple Syrup
1 Tbsp Grounded Almonds
1/2 Tsp Cinnamon
1/4 Tsp All Spice
1/2 Tsp Pure Vanilla Extract

Topping:
3/4 Cup of pecans
1/2 cup unsweetened coconut flakes
1 Scoop of favorite protein powder
1/4 Tsp Cinnamon
2 Tbsp Pure Maple Syrup

DIRECTIONS
1. Preheat oven to 350 F, grease an 8 inch square pan with Coconut oil
2. Mix in a large bowl apples, coconut flour, maple syrup, grounded almonds, cinnamon, all spice
and vanilla extract.
3. Put mixture into baking pan and spread evenly.
4. Mix toppings together……stir until it is crumbly
5. Bake for 45 mins , top should be golden brown
6. Allow to cool for 10 mins. Can top with some Greek Yogurt or eat the way it is….YUM!

TIPS TO ALTER IN LIEU OF A DIETARY RESTRICTION
In case of allergy to nuts mix with some dried fruit such as cranberries, remove all together and
just use remaining ingredients.
In case of allergy to coconut simply remove and add an extra nut.

TIPS TO SUB AN INGREDIENT TO ALTER THE RECIPE
Can use peaches or pears instead of apples. Use 3 medium of either and slice thin. Follow the
rest of the receipe the same way.
