Today we are pumped to share this recipe for you from recently Certified Fitness & Nutrition Expert  Ashley Wheeler! Ashley created this recipe for one of the assignments in the Nutrition Module of the FNE program! We are excited to introduce Ashley and her creation!

A journey that started for me back in 2015 after having my daughter. I was soon to return back to work as an Elementary School Teacher but the anxiety of returning and leaving my daughter to an entire stranger was just too much for me. It was at that moment that I began my search for a work from home opportunity.

Little did I know that it would change mine and my family’s life forever! I found the Beachbody opportunity in June of 2015 jumped in and never looked back. It provided me with the income that allowed me to stay home with my daughter, helped me lose my baby weight and all while inspiring others to take action too. It made my heart sing! My new job quickly became a passion and I decided to take my business to the next level. I became a PiYo LIVE instructor and then a certified health coach. This provided me with the tools to help my clients break through blockages in all areas of their life and take their health and happiness to the next level.

I knew I wanted to continue to learn about fitness and nutrition so when I found FNE it was obvious that  it was the perfect next step. It taught me how to write personalized plans in both fitness and nutrition taking my business from a fitness business to a one stop shop for fitness + nutrition + life coaching.

Once a mom and teacher now a Holistic Health Coach thanks to courses like FNE….. Who would have thought….

Chicken and Spinach with Vegetable Cauliflower Rice

If you are a busy parent you will LOVE this recipe because this recipe is inspired by the life of a busy mom. I am always looking for quick, easy, affordable meals that the whole family will like. This meal has become one of our go tos and is a hit even with our fussy eaters. Shhhh….They don’t even realize that I have replaced the real rice with cauliflower 😉.

It is a great meal for a school night since it only takes about 30 minutes to prepare and it always provides my daughter with leftovers for her lunch the next day. Which is a must in this household because not only do leftovers mean saving time and money, it also means that I know my daughter is going to school with healthy whole food lunches.

So, skip the processed sandwich meat and go with this complete in 3 approved meal featuring chicken breasts topped with spinach and a side of veggie loaded cauliflower rice. Not only have we added in some healthy fat with the use of coconut oil, but you will also be happy to know that you will be getting 8g of fiber and 13g of protein per serving. 3 essential nutrients that should be found in all of your meals for good health and a balanced diet. Protein to help you stay fuller longer and balance your blood sugar levels, healthy fats to aid in cell growth as well as heart and brain health and fiber to help lower cholesterol and help bowel health. This meal is guaranteed to satisfy your taste buds and benefit your health.

PREP TIME: 10 minutes

COOK TIME: 20 minutes

TOTAL TIME: 30 minutes

TOTAL CALORIES PER SERVING: 200 calories/serving

MACRONUTRIENT BREAKDOWN PER SERVING (INCL FIBRE GRAMS!):
Without cheese:
Carbs: 17g
Fat: 10g
Protein: 13g
Fiber: 8g

INGREDIENTS:

  • 4 3.20oz chicken breasts
  • 4 cups of baby spinach
  • 2 cups of frozen spaghetti vegetables
  • 1 medium head of cauliflower
  • 2 tbsp of coconut oil
  • 1/2 tbsp of ground black pepper
  • Balsamic vinegar

DIRECTIONS

  1. Preheat oven to 350 degrees Fahrenheit
  2. Make butterfly cut in chicken then lay flat on baking sheet
  3. Place 1c of baby spinach on each chicken breast
  4. Place in oven and cook for approximately 20 minutes or until chicken is cooked
  5. Chop head of cauliflower into rice using a food processor
  6. Place cauliflower in a pot with 2 tbsp of coconut oil
  7. Add 2 cups of froze spaghetti vegetables (fresh veggies can be used if you have them on hand)
  8. Add pepper
  9. Cover and cook on medium heat until veggies are cooked. Stirring occassionally
  10. Enjoy 1 chicken and spinach breast with 1 1/2 cups of cauliflower rice. Drizzle ½ tbsp of balsamic vinegar over chicken before serving.

TIPS TO ALTER IN LIEU OF A DIETARY RESTRICTION

Can’t eat chicken? Instead of chicken you could use fish

TIPS TO SUB AN INGREDIENT TO ALTER THE RECIPE

Protein: Try using fish instead of chicken (Salmon, haddock, cod would be great options)
Veggies: This would also be delicious with asparagus instead of chicken on top of the chicken breasts. Try It with any of your favorite greens!
Cheese: We also LOVE this recipe with cheese! Simply place 4oz of cheese on each chicken and spinach breast before putting in the oven and skip the balsamic vinegar when serving.
Here is how cheese changes your values: 294 calories/serving, Carbs: 18g, fat: 17g, protein: 20g, Fiber: 9g)

ADDITIONAL NOTES:
This meal is super duper easy to personalize for all kinds of different eaters without it taking up a bunch of time. I eat mine with balsamic vinegar, my fiancé eats his with cheese on top and my kids eat it with no topping. Top each chicken breast with desired toppings before popping it in the oven or sprinkle something on it before you serve and everyone has their own personalized version of this meal with no time added.
