At FIT CHICKS Academy we love seeing the creativity and hard work of our Fitness & Nutrition Expert Program (FNE) students and grads. Today we are pumped to share this recipe with you from Fitness & Nutrition Expert Anitra Mayweather! Anitra created this recipe for one of the assignments in the Nutrition Module of the FNE program. We are excited to introduce Anitra and her creation!

Hi Everyone, I’m Anitra Mayweather, a vivacious fitness enthusiast with a passion for both exercise and exploration. Before embarking on the FNE Program, I dedicated myself to regular workouts, serving as a beacon of motivation for friends and family in their fitness journeys. Known affectionately as “Jane Fonda” amongst my closest friends, my commitment to exercise has been a defining aspect of my personality for many years. Since, I’ve become eager to elevate my understanding of nutrition, exercise, and decided to set my sights on becoming a certified expert. I’m committed to inspiring and educating others on the transformative power of a balanced lifestyle. My goal is to help others unlock the next level of well-being and vitality.

Before embarking on the FNE Program, I dedicated myself to regular workouts, serving as a beacon of motivation for friends and family in their fitness journeys. The main issues I faced were hormonal imbalances (hot flashes). And, they weren’t fun!

I choose FIT CHICKS Academy because it came highly recommended by my sister in Christ and fellow workout buddy. As someone I trust, I knew it would be a good fit.

My biggest takeways from the FNE program are: The holistic aspect to the program covering all areas of fitness: nutrition, fitness and wellness; the level of information provided in each module was very thorough; and, the amount of work required to complete the certification which actually requires you to do the work (virtually).

Surf & Surf Easy Salad Delight

Crafting this speedy and nutritious salad stemmed from the need for a healthful yet time-efficient option on hectic work-days without pre-prepared meals in the refrigerator.

Opting for seafood was a natural choice due to its quick preparation. This recipe is tailor-made for individuals leading busy lives, whether working from home or managing multiple responsibilities as a parent. Its appeal lies in being “Complete in 3” approved, ensuring a well-rounded composition of essential macronutrients—protein, healthy fats, and fibrous carbohydrates. Embracing the “Complete in 3” principle is crucial, as it optimally stabilizes blood sugar levels, making it an excellent choice for maintaining energy and focus throughout demanding days.

COOK TIME: 25 Minutes

TOTAL CALORIES PER SERVING: 424 calories per serving

MACRONUTRIENT BREAKDOWN PER SERVING (INCL FIBRE GRAMS!):

  • Carbohydrates: 24g
  • Fat: 7g
  • Protein: 20g
  • Fiber: 7g

INGREDIENTS:

  • Spring Salad mix
  • Salmon
  • Shrimp
  • Almonds
  • Tomatoes
  • Blueberries
  • Strawberries
  • Carrots
  • Balsamic Vinaigrette

DIRECTIONS

  1. Heat 1 Tablespoon of olive oil in a large skillet over medium heat.
  2. Put shrimp in a mixing bowl and rub in your favorite seasoning mixture.
  3. Add shrimp to the hot pan with olive oil and cook for about 2-3 minutes on each side, turning once midway, until shrimp is pink and cooked through. Then set to the side.
  4. Bake salmon uncovered, at 425. for 15-20 minutes or until the fish fakes easily with a fork. Then set to the side.
  5.  Add mixed greens (salad) to the plate then top with Salmon and Shrimp.
  6.  Add Blueberries, strawberries, grape tomatoes and almonds on top of mixed greens.
  7. To complete the salad, add 2 tablespoons of Balsamic Vinaigrette

TIPS TO ALTER IN LIEU OF A DIETARY RESTRICTION

  • If seafood is not your thing, substitute for Chicken. And for the vegans, use tofu instead

TIPS TO SUB AN INGREDIENT TO ALTER THE RECIPE

  • Allergic to nuts, delete the almonds or sub for seeds like sunflower.
