Hey Chicks, At FIT CHICKS Academy we love seeing the creativity and hard work of our Fitness & Nutrition Expert Program (FNE) students and grads. Today we are pumped to share this recipe with you from recently Certified Fitness & Nutrition Expert Sabriyeh Alibai! Sabriyeh created this recipe for one of the assignments in the Nutrition Module of the FNE program. We are excited to introduce Sabriyeh and her creation!

My name is Sabriyeh Alibai and I live in Toronto. I graduated from the FNE program November 2019 and have been working as a personal trainer since. Fitness has been my passion and helps me clear my mind of the usual daily stresses in life. Protein Oat Mini Banana Muffins

 

Within the past couple of months I have come across a great number of recipes for banana oat
muffins and have come up with a final recipe that is moist and the perfect sweet snack for the
sweet tooth cravings or to enjoy with a strong cup of coffee :). These high protein gluten and
dairy free mini muffins are a great pre and post workout snack.

MACRONUTRIENT BREAKDOWN PER SERVING (INCL FIBRE GRAMS!):

Protein 2g
Carbs 14g
Fat 4g

 

INGREDIENTS:

3 ripe medium mashed bananas
2 cups oats
1 egg
1 tsp baking soda
1/2 tsp cinnamon
2 tablespoons coconut oil melted
1/3 cup natural honey
3 tablespoons hemp hearts and 1 for sprinkling on top
1/3 cup walnuts or chocolate chips (optional for topping)

DIRECTIONS

  1. Preheat the oven to 350F. 
  2. Add all of the above ingredients to the mashed bananas and pour 1.5tsp of the mixture into each mini muffin case (24 servings). 
  3. Top each muffin with 3 mini chocolate chips or walnut pieces. Sprinkle 1 tablespoon of hemp hearts on the muffins and bake at 350F for 18-20 mins or until an inserted toothpick comes out clean. 

CHICK TIPS:

Use milk chocolate chips if you want a sweeter taste and dark or semi-sweet chocolate chips for a less sweet taste. Walnuts can be used for a crunchier texture and to reduce the sweetness even more.

If you prefer a strong cinnamon flavor, you can sprinkle some cinnamon on the muffins just before you put them in the oven.
